|Hot Italian Sausage Sauce

3 large hot Italian sausages
1 Clove of Garlic
8 small tomatoes
Pinch of Salt
Pinch of sugar
Half a glass of Wine.
Heat olive oil in a sauce pan.
Chop onion and cook in frying pan.
Break sausage into pieces and cook with onion.
Chop Garlic and add to saucepan.
Once sausage is cooked, add wine.
Once most of the wine is gone, add Salt, Pepper and Basil.
Remove skin from tomatoes and blend, then add to sauce.
Add a pinch of sugar to the sauce.
Add tomato paste.
Let sauce simmer on low hear.
This sauce goes well with Ravioli but also penne is quite nice.
Make sure to serve with Parmesan cheese.
