| Method of Preparation: Soak the lentils in the water overnight. Finely chop the onions and cook in olive oil until brown. Add lentils with the same water, tomato paste, a pinch of salt, red pepper and mint to taste. Simmer for 20 minutes. Cook on low heat for 2-3 hours. Makes 2 cups (500ml) soup. |

| Serving: This is a hardy soup, great for a cool day. Add pepper, mint, crackers or breadcrumbs when eating. This soup is a good entree for lunch of for dinner. |
