Couscous Salad

Ingredients:

2 cups Couscous
1 Onion
2 Tomatoes
3/4 Cup Olive Oil
1 Lemon
1/2 Red Pepper
1/2 Yellow Pepper
Parsley
Basil
Pepper
Pinch of Salt
Preparation:

Place couscous in a large bowl.
Pour olive oil over couscous and mix.
Chop onion, tomatoes, parsley and peppers into tiny
peices.
Mix in vegtables.
Squeeze the juice of one lemon over salad.
Add a fair amount of basil and pepper and salt to taste.
Mix salad well.
Let salad sit in fridge for about 2 hours.
Serve cold.
